Chojuro
Pyrus pyrifolia. Medium to large, flattened brown russeted greenish fruit with thick skin. White flesh is crisp like an apple when ripe; mild slightly aromatic flavor. Keeps in cool storage until February. Medium size, spreading, vigorous, early bearing tree; reliable annual bearing tree with somewhat drooping habit. Somewhat prone to overbearing; needs some thinning. Pollinate with jisseiki, Bartlett, Hosu, 20th Century or Shinko. Poorer quality fruit in dry climates. Ripens during September. 450-500 chill hours. Some of the best new varieties are crosses of Chojuro x Nijiseki.
Shinseiki ( Next Generation / 20th Century)
Nijisseiki x Chojuro. Round medium to large, yellow fruit with little or no russet. Crisp, creamy white flesh; mild, sweet flavor. Tastes best when tree ripened. Retains quality longer than any midseason variety. Hangs on the tree in good condition for 4-6 weeks. Stores through January; keeps well under refrigeration. Larger tree than other Japanese varieties; vigorous and spreading. Usually bears second year. Pollinate with Bartlett, Chojuro, Nijiseki or Hosui.
Hosui (Much Water)
Pyrus pyrifolia. Kikusui x Yakumo. Medium large, brownish orange fruit. Juicy, sweet, fine grained, crisp, off white flesh; 12% sugar content. Stores through December. Large round fruit with medium thick skin covered with yellow – brown russet and numerous russet dots. Firm, crisp, fine textured flesh. Produces tart tasting fruit in cooler climates with mild, short summers. Favorite in several taste tests. Exceptionally vigorous tree with floppy. Spreading, loose growth habit. Vigorously develops lots of flower bud spurs. Pollinate with Chojuro, 20th Century, Bartlett, Shinseki, or Shinko
